Spinach Artichoke Dip French Bread Pizza







Spinach Artichoke French Bread Pizza


Ingredients:
¾ of a loaf of unbaked French bread (sliced in half)
1 can artichoke hearts – drained and chopped
2 cups defrosted spinach –I used the frozen from the bag, defrosted it in the microwave and removed the excess water by squeezing with paper towels
¼ sweet onion – chopped
1 clove garlic
1 cup fat free greek yogurt
½ cup veganise or other mayo of choice
¾ cup grated parmesan cheese
salt and pepper to taste

Directions:
Preheat oven to 400. Combine all ingredients in a bowl and mix well. Spread generous servings on the French bread. Bake at 400 for10 minutes and then 500 for 3 minutes. Slice and serve.

Cauliflower Pizza Bites

Cauliflower Pizza Bites


 Last night I went to Pinot's Palette and I brought the food. I wanted to bring something appetizeryish, healthy, and tasty. I made cauliflower crust pizza a few weeks ago. It smelled AMAZING and tasted also AMAZING but I did not get the crust crusty enough so it ended up like a soggy casserole. I experimented with the crust until I found the perfect way. I like making these in the muffin pan because the smaller they are, the thicker they can be and still stay together. Here is the recipe:


 
Ingredients:
1 head cauliflower
2 eggs
1 cup shredded mozzarella cheese (divided into ¾ cup and ¼ cup)
¼ cup shredded parmesan cheese
1 tbsp onion powder
2 ½ tbsp dried oregano
2 ½ tbsp dried basil
Olive oil

Toppings:
Jarred pasta sauce – I like HEB brand Tomato Basil
Cherry tomatoes – cut in halves
Fresh Basil


Directions:
Preheat oven to 450.  Generously spray a muffin dish with nonstick cooking spray or lightly coat in olive oil.

Cut up the cauliflower and put pieces in food processor to chop. Don’t over chop or it will get too watery. I did this step in about 6 batches. After all the cauliflower is chopped, put in a large microwave safe bowl and microwave for 8 minutes.

Let cool for a few minutes after removing from microwave.

Mix in the eggs, seasonings, ¾ cup mozzarella cheese, and parmesan cheese. Spoon about 2 ½ tablespoons into each muffin pan. Press around to make a cup-like form. Make sure that it is the same thickness all around.

Bake for 21 minutes. Let cool for about 5 minutes and remove from muffin pan. If you have trouble getting them out of the pan, place in the freezer for a few minutes and this should make it easier to remove them.

Heat over to broil and grease a baking sheet. Put the crusts on a baking sheet and broil for 4 minutes.

Remove from oven and spoon some sauce into each crust and top with tomatoes and remaining cheese.

Broil for another 3 minutes. Remove from oven and top each pizza with fresh basil.

Focaccia Pizza with Sausage


Focaccia Pizza Sausage

 
Ingredients:
Focaccia Bread
Chicken Apple Sausage – sliced and cooked
Fresh Basil – about 5-10 pieces
1 cup mozzarella cheese
¼ cup Feta cheese
½ cup marinara sauce 

 

Heat the bread in the oven for 8 minutes. Remove bread and place on a cookie sheet. Brush with olive oil and then top with sauce, mozzarella cheese, basil, sausage, and feta.

Heat oven to 350. Cook pizza for about 10 minutes. Enjoy!!!



Focaccia Pizza Sausage

Ingredients:
Focaccia Bread

  Ingredients: Focaccia Bread
About 10 cherry or grape tomatoes
Extra Virgin Olive oil, salt, and pepper to coat tomatoes while baking
Fresh Basil – about 5-10 pieces
½ cup mozzarella cheese
¼ cup Feta cheese
 
Preheat oven to 275. Coat tomatoes with oil, salt, and pepper. Cook for about 15 minutes.
 
Heat the bread in the oven for 8 minutes. Remove bread and place on a cookie sheet. Brush with olive oil and then top with mozzarella cheese, basil, tomatoes, and feta.
Heat oven to 350. Cook pizza for about 10 minutes. Enjoy!!!

Pizza Mushrooms


Mike and I went to downtown Bryan two weekends ago as a part of our one year wedding anniversary celebration. We went to Messina Hof winery and Cafe Capri for dinner (where we got engaged : )) We had a great time! We went to the antique store while we were there and I found some really pretty china appetizer/dessert plates. 



So obviously I was dying to use them!! We had an "appetizer party" last Saturday night which consisted of bacon wrapped shrimp (recipe to come!), pizza mushrooms, roasted garlic hummus, carrots and pita bread for dipping, Zucchini Chips with ranch dressing, and wine of course. 



Here is the recipe for the Pizza Mushrooms!


Pizza Mushrooms

Ingredients:
1 container white mushrooms
1/3 cup tomato basil marinara sauce
3 tablespoons reduced fat crumbled feta cheese
1 tablespoon chopped flat italian parsley
drizzle of olive oil
sprinkle of salt

Heat oven to broil

Wash and de-stem mushrooms.

Place in baking dish open side down. Drizzle olive oil and sprinkle with salt. Broil in oven for 3 minutes.

Take out of oven and turn mushrooms over. Fill with marinara sauce, cheese, and parsley. Heat in oven for 4-5 minutes. Serve warm. Goes great with ranch dressing!
